It starts with picking the chestnuts in their husks and carefully selecting only the plumpest ones. Next, they're hand-wrapped in muslin, cooked and candied in a syrup with vanilla pods and just the right amount of sugar... The multi-step process has hardly changed in centuries. The glazing makes the chestnut even shinier than it already is, and the rum added during this stage gives it that beautiful golden hue. Initially, the texture is pleasantly firm, before revealing a delightfully melting core.
