Bergamot is a citrus fruit used primarily in Calabria, southern Italy. The bergamot tree grows up to 4 meters tall and is characterized by long, evergreen leaves and round, pear-shaped white flowers. Its acidic fruits are harvested between November and March. Bergamot is mainly used in perfume production (Eau de Cologne), as a top note, and as a flavoring for foods (Earl Grey tea).
